Ashley Hunter 00ecbca7d2 build(repo): fix update-ui-docs-snapshot script for vitest ...

Replace the jest-era invocation (npm test ... --updateSnapshot --skip-cache) with the vitest/nx
equivalent so the snapshot can actually be regenerated.
