fix(skills): sync build selectors and removed-command notes with asc 5.x

Replace the --build build selector, removed in asc 5.0.0, with --build-id
in release stage, review submit, testflight crashes/feedback list,
performance diagnostics list, performance download, encryption
declarations assign-builds, the workflow sample, and the publish
testflight upload-only note. Describe --password/ASC_MATCH_PASSWORD,
asc subscriptions review submit, and asc iap submit as removed rather
than deprecated. Verified against App-Store-Connect-CLI origin/main
78d90da1e (5.3.0) --help output.
