Jorge Espada 013e918273 feat: add nixpkgs-unstable input for bleeding-edge packages ...

Adds nixpkgs-unstable as separate input alongside stable 24.11, following
common Nix patterns. Allows using stable by default while selectively
pulling newer packages from unstable when needed.

Usage: pkgs-unstable.somePackage in buildInputs
