Alessio Gravili 17172976e1 feat(plugin-mcp): bump sdk version to 2.0.0-beta.3 (#17285 )

- Upgrade the MCP client and server libraries from `2.0.0-beta.2` to
`2.0.0-beta.3`.
- Add int test for the SDK's stricter HTTP content-type handling.
