Sasha Rakhmatulin 6da9e1a813 fix: do not add a typeSafeDepth default to the sanitized config

sanitize.spec.ts asserts the exact set of typescript defaults, and the flag is a
behavioural no-op there - every read site uses `config.typescript?.typeSafeDepth`.
The sibling opt-in flags `strictDraftTypes` and `generateInputTypes` are not
defaulted either, so drop it for consistency.
