Nick Ferguson 30b0f155c8 feat: setup plugin for Claude marketplace installation ...

- Update plugin.json with postInstall hook and v3.0.0
- Delete outdated marketplace.json (plugins/ consolidated)
- Add scripts/post-install.sh for automatic rule symlinking
- Add scripts/uninstall.sh for cleanup
- Add _find_plugin_root() to installer.py for multi-install support
- Update README with new installation instructions

Users can now install via:
  claude install github:NickCrew/claude-cortex

Or with Python CLI:
  pip install claude-cortex
  cortex install bootstrap --link-rules
