* fix: replace examples symlinks with redirect READMEs
GitHub's web UI renders symlinks as plain text showing the target path
instead of navigating to the linked directory. Replace the symlinks
with directories containing README files that link to the actual
example directories, so clicking through works on GitHub.

* fix: add example READMEs with descriptions to library directories
Add README.md files to the actual example directories so GitHub
renders them when browsing. Each README lists all examples with
short descriptions in table format.
