apk 274d5ae2ca test: keep symlink_layout unix-only ...

Folding the symlink test assertions into a helper put it between
#[cfg(unix)] and symlink_layout, so the attribute moved to the helper and
std::os::unix::fs::symlink no longer compiled on Windows.
