Miguel Ángel 182f5317ea ci: scope regression tests to core/producer/engine packages only ...

Regression tests (Docker + Chromium frame capture) are expensive
(~30min across 8 shards). Previously they triggered on any change
under packages/**, including cli, studio, and ui-player changes
that can't affect rendering output.

Narrow the paths-filter to only packages/core, packages/producer,
and packages/engine — the packages that actually affect compiled
HTML and rendered video output.
