JaeSoon (jason) a79b6387f4 chore(http): remove transitional /health alias in favour of /livez and /readyz (#162)
PR #427 split the original /health endpoint into /livez (liveness, no
external deps) and /readyz (readiness, with Redis ping), leaving /health
as a backward-compatible alias of /readyz. Remove that transitional
alias now so the API surface is clean and operators are no longer
exposed to a path whose semantics quietly changed.

- Drop /health route registration in remote and sign HTTP servers
- Stop exempting /health from the OTel tracing middleware skip list
- Update Dockerfile HEALTHCHECK probes to /livez (liveness must not
depend on Redis, so /livez is the correct target — not /readyz)
- Remove /health backward-compatibility tests; coverage for the
underlying behaviour is provided by the existing /readyz test cases

Operator note: liveness and readiness probes must point at /livez and
/readyz respectively before upgrading; /health now returns 404.
