fix(slack-example): make the Notion MCP sidecar launcher actually work

Two Windows/Notion correctness fixes surfaced by running it:
- spawn with shell:true so Windows resolves `npx` -> `npx.cmd` (Node refuses
  to spawn .cmd directly without a shell -> `spawn EINVAL`).
- Authenticate the Notion API via OPENAPI_MCP_HEADERS (Authorization +
  Notion-Version) instead of NOTION_TOKEN. With NOTION_TOKEN set, the server
  builds its own auth header and omits the version, so every call fails with
  400 `missing_version`. NOTION_TOKEN is deliberately removed from the child env.
